New Recipe | Baked Summer Fruit Salad
Fancy a little summer treat? We have the perfect baked fruit salad recipe that will be a real crowd pleaser, full of fresh fruit that will leave you wanting more 🍒
What You'll Need:
- 4 Ripe Peaches
- 200g Cherries
- 6 Plums
- 1.5 Oranges, juiced
- 1 tsp Vanilla Extract
- Unsalted butter
- Cinnamon 1 tsp
- Caster Sugar 1tsp
For extra indulgence:
- Fresh mint leaves (chopped)
- Clotted cream or crème fraîche
- Crumbled amaretto biscuits
What You'll Need to Do:
• Preheat the oven to 150c/130C fan.
• Wash all of the fruit and pat dry.
• Juice the oranges and mix with the vanilla extract, and put to one side.
• Mix the caster sugar and cinnamon sugar in a separate bowl, and put to one side.
• Pit and cut the peaches, plums and cherries (we like to add a mix of halves and quarters of peaches)
• Place the fruit into a baking dish skin side down and pour the orange and vanilla mix over all the fruit, making sure everything is covered. Turn the fruit if needed, but make sure all the pieces return to the skin down position.
• Add a small square of butter to the middle of the peach halves and just a little dot the remaining fruit
• Sprinkle the cinnamon sugar mix over the fruit.
• Roast for 30-40 minutes, checking at 15-20 minute intervals to ensure the fruit doesn't over cook. When ready the fruit should be soft and juicy.
• The larger peach halves may need a further 5 minutes.
• Place all the fruit in a serving bowl and drizzle with any remaining juice from the tray. For an extra special treat, garnish with chopped mint leaves, crumbled amaretto biscuits and clotted cream (or crème fraîche for a little lighter finish).
